Ingredients

  • 1 pound firm white fish (such as cod or halibut), cut into chunks
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes.
  2. Incorporate the minced garlic and cook for an additional minute until aromatic.
  3. Add the chopped red and green bell peppers to the skillet, cooking them for 3-4 minutes until they start to soften.
  4. Sprinkle in the cumin, smoked paprika, turmeric, sea salt, and black pepper. Mix everything well and allow the spices to toast for about a minute.
  5. Pour in the coconut milk, stirring to combine, and bring the mixture to a gentle simmer.
  6. Carefully add the fish chunks to the skillet, ensuring they are well-coated in the coconut milk. Cover the skillet and let it simmer for 10-12 minutes, or until the fish is thoroughly cooked and flakes apart easily.
  7. Once done, remove the skillet from heat and stir in the lime juice and chopped cilantro.
  8. Serve the stew warm, garnished with extra cilantro if desired.
