- 1 pound firm white fish (such as cod or halibut), cut into chunks
- 1 can (14 ounces) coconut milk
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- Juice of 2 limes
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes.
- Incorporate the minced garlic and cook for an additional minute until aromatic.
- Add the chopped red and green bell peppers to the skillet, cooking them for 3-4 minutes until they start to soften.
- Sprinkle in the cumin, smoked paprika, turmeric, sea salt, and black pepper. Mix everything well and allow the spices to toast for about a minute.
- Pour in the coconut milk, stirring to combine, and bring the mixture to a gentle simmer.
- Carefully add the fish chunks to the skillet, ensuring they are well-coated in the coconut milk. Cover the skillet and let it simmer for 10-12 minutes, or until the fish is thoroughly cooked and flakes apart easily.
- Once done, remove the skillet from heat and stir in the lime juice and chopped cilantro.
- Serve the stew warm, garnished with extra cilantro if desired.
