- 1 ½ cups almond flour
- ½ cup unsweetened shredded coconut
- ¼ cup granulated erythritol (or preferred keto sweetener)
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened

- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons pandan extract
- ½ cup coconut cream
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a mixing bowl, combine almond flour, shredded coconut, erythritol, and salt. Pour in the melted butter and mix until the mixture is crumbly and well combined.
- Press the mixture firmly into the bottom of the prepared baking pan to form the crust. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
- In a large bowl, beat the softened cream cheese and erythritol until smooth and creamy. Add the eggs, vanilla extract, pandan extract, and coconut cream. Mix until fully combined and smooth.
- Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for an additional 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let it cool at room temperature for about 30 minutes. Then, refrigerate for at least 2 hours to set completely.
- Once chilled, cut into bars and serve. Store any leftovers in an airtight container in the refrigerator.
Notes
- For a tropical twist, try adding a tablespoon of lime juice to the cheesecake mixture for a zesty flavor.
- You can also top the bars with a dollop of whipped coconut cream for added richness.
