Description

Coconut-Pandan Keto Cheesecake Bars are a must-try treat for those following a keto diet, combining the flavors of coconut and pandan in a delicious cheesecake form.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup granulated erythritol (or preferred keto sweetener)
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons pandan extract
  • ½ cup coconut cream


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine almond flour, shredded coconut, erythritol, and salt. Pour in the melted butter and mix until the mixture is crumbly and well combined.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form the crust. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese and erythritol until smooth and creamy. Add the eggs, vanilla extract, pandan extract, and coconut cream. Mix until fully combined and smooth.
  5. Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for an additional 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let it cool at room temperature for about 30 minutes. Then, refrigerate for at least 2 hours to set completely.
  7. Once chilled, cut into bars and serve. Store any leftovers in an airtight container in the refrigerator.

Notes

  • For a tropical twist, try adding a tablespoon of lime juice to the cheesecake mixture for a zesty flavor.
  • You can also top the bars with a dollop of whipped coconut cream for added richness.
