Delicious Colombian-style stuffed zucchini that is perfect for a hearty meal.
Ingredients

- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the seeds.
- In a bowl, mix the quinoa, black beans, corn, cumin, paprika, garlic powder, and salt.
- Fill each zucchini half with the mixture and place them on a baking dish.
- If using, sprinkle the shredded cheese on top of the filled zucchinis.
- Bake for 25-30 minutes until the zucchinis are tender.
- Serve warm and enjoy!
Notes
- These can be made vegan by omitting cheese.
- Feel free to add other vegetables to the stuffing.
