Description

Delicious Colombian-style stuffed zucchini that is perfect for a hearty meal.


Ingredients

Scale
  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 cup shredded cheese (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the seeds.
  3. In a bowl, mix the quinoa, black beans, corn, cumin, paprika, garlic powder, and salt.
  4. Fill each zucchini half with the mixture and place them on a baking dish.
  5. If using, sprinkle the shredded cheese on top of the filled zucchinis.
  6. Bake for 25-30 minutes until the zucchinis are tender.
  7. Serve warm and enjoy!

Notes

  • These can be made vegan by omitting cheese.
  • Feel free to add other vegetables to the stuffing.
