Description

These Copycat Starbucks Egg Bites are a delicious and healthy alternative to the popular coffee shop version, easy to make at home.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar or any preferred type)
  • 1/4 cup diced bell peppers
  • 1/4 cup cooked bacon, chopped (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 325°F (163°C) and grease a muffin tin.
  2. In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  3. Add in your choice of cheese, bell peppers, and bacon if using.
  4. Pour the mixture evenly into the muffin tin cups.
  5. Bake for 25-30 minutes or until the egg bites are set and lightly golden.
  6. Let cool slightly before removing from the tin and enjoy!
