These Copycat Starbucks Egg Bites are a delicious and healthy alternative to the popular coffee shop version, easy to make at home.

- 1/2 cup cottage cheese
- 1/4 cup shredded cheese (cheddar or any preferred type)
- 1/4 cup diced bell peppers
- 1/4 cup cooked bacon, chopped (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 325°F (163°C) and grease a muffin tin.
- In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
- Add in your choice of cheese, bell peppers, and bacon if using.
- Pour the mixture evenly into the muffin tin cups.
- Bake for 25-30 minutes or until the egg bites are set and lightly golden.
- Let cool slightly before removing from the tin and enjoy!
