Description

These delicious Corn & Zucchini Fritters are a perfect side dish or appetizer, combining fresh vegetables with a crispy outer crust.


Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup oil for frying


Instructions

  1. In a large bowl, combine grated zucchini and corn.
  2. Add flour, parmesan cheese, egg, parsley, salt, pepper, garlic powder, and onion powder to the bowl. Mix until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil and flatten slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Remove from oil and drain on paper towels.
  7. Serve warm.

Notes

  • For a gluten-free option, substitute all-purpose flour with gluten-free flour.
  • Fritters can be served with a dipping sauce of your choice.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
