These delicious Corn & Zucchini Fritters are a perfect side dish or appetizer, combining fresh vegetables with a crispy outer crust.
Ingredients

- 2 cups grated zucchini
- 1 cup corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup grated parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup oil for frying
Instructions
- In a large bowl, combine grated zucchini and corn.
- Add flour, parmesan cheese, egg, parsley, salt, pepper, garlic powder, and onion powder to the bowl. Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil and flatten slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from oil and drain on paper towels.
- Serve warm.
Notes
- For a gluten-free option, substitute all-purpose flour with gluten-free flour.
- Fritters can be served with a dipping sauce of your choice.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
