A delicious and creamy pudding made with cottage cheese and coconut.
Ingredients

- 2 cups cottage cheese
- 1 cup coconut milk
- 1/2 cup shredded coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin (optional)
Instructions
- In a blender, combine the cottage cheese, coconut milk, honey, and vanilla extract.
- Blend until smooth and creamy.
- If you are using gelatin, dissolve it in a little warm water and add it to the mixture.
- Stir in the shredded coconut.
- Pour the mixture into serving bowls and refrigerate for at least 2 hours to set.
- Serve chilled and enjoy!
Notes
- For a dairy-free version, substitute cottage cheese with a plant-based yogurt.
- Adjust sweetness according to taste.
