- 1 cup cottage cheese, drained
- 1/2 cup almond flour
- 1/4 cup erythritol or your preferred keto sweetener
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, almond flour, erythritol, cocoa powder, vanilla extract, baking powder, and salt. Mix until well combined and smooth.
- If using, fold in the sugar-free chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are slightly firm and the tops are set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a different flavor, substitute almond flour with coconut flour, but use only 1/4 cup as coconut flour absorbs more moisture.
- Add chopped nuts or dried unsweetened coconut for added texture and flavor.
