This Amish Snow Day Soup is the perfect comfort food for winter, warming you up from the inside out.
Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 large carrots, diced
- 2 stalks celery, diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded chicken (optional)
- 1 cup corn (fresh or frozen)
- 2 cups potatoes, cubed
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Pour in chicken broth and bring to a simmer.
- Add carrots, celery, and potatoes, cooking until tender.
- Stir in peas, corn, shredded chicken, thyme, salt, and pepper.
- Simmer for an additional 10 minutes.
- Serve hot and enjoy!
