  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium skillet, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
  3. Stir in the jalapeño (if using) and cook for an additional 1-2 minutes.
  4. Reduce the heat to low and add the cottage cheese, cheddar cheese, diced tomatoes, garlic powder, onion powder, salt, and black pepper.
  5. Stir until the cheese is melted and the mixture is creamy, about 3-5 minutes.
  6. Remove from heat and stir in cilantro if desired.
