- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (drained)
- 1/4 cup diced green bell pepper
- 1/4 cup diced onion
- 1 jalapeño pepper, finely chopped (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped (optional)
- 2 tablespoons olive oil
Instructions
- In a medium skillet, heat the olive oil over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
- Stir in the jalapeño (if using) and cook for an additional 1-2 minutes.
- Reduce the heat to low and add the cottage cheese, cheddar cheese, diced tomatoes, garlic powder, onion powder, salt, and black pepper.
- Stir until the cheese is melted and the mixture is creamy, about 3-5 minutes.
- Remove from heat and stir in cilantro if desired.
- Serve warm with keto-friendly veggies or cheese chips.

- For an extra kick, add more jalapeño or a dash of hot sauce.
