- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 ounces mushrooms, sliced (cremini or button work well)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil and butter in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- Add sliced mushrooms to the skillet and sauté for about 5 minutes until browned. Add minced garlic and cook for an additional minute.
- Pour in heavy cream, add thyme and garlic powder, and stir. Let the sauce simmer for 3-4 minutes to thicken.
- Return the chicken to the skillet, coating it with the sauce. Simmer for another 2-3 minutes.
- Sprinkle Parmesan cheese over the chicken and garnish with parsley before serving.
