This Creamy Sauerkraut and Sausage Soup is a comforting and flavorful dish that’s perfect for cold days.


Ingredients

  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups sauerkraut, drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned.
  2. Add diced onion and minced garlic; sauté until the onion is translucent.
  3. Stir in sauerkraut and chicken broth; bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream and caraway seeds; season with salt and pepper.
  6. Simmer for an additional 5 minutes before serving.
