			- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper.
- Slice a pocket in each chicken breast and stuff with the spinach mixture.
- Heat olive oil in a skillet over medium heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until cooked through.
- Let rest for a few minutes before serving.
