Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a bowl, toss the cut zucchini with salt and let it sit for about 10 minutes. Pat the zucchini dry with paper towels to remove excess water.
- In a separate bowl, combine the almond flour, Parmesan cheese, black pepper, garlic powder, and onion powder.
- Dip each zucchini fry into the beaten eggs, allowing excess to drip off. Then coat the fry in the almond flour mixture, pressing lightly to ensure it adheres.
- Place the coated zucchini fries on the prepared baking sheet in a single layer. Spray lightly with olive oil spray for extra crispiness.
- Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
