Ingredients

  • 2 cups celery, diced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 large eggs
  • 2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. Heat a large skillet over medium heat. Add olive oil and let it heat for about 1 minute.
  2. Add the diced celery, onion, and red bell pepper to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender and starting to brown.
  3. Sprinkle in the garlic powder, smoked paprika, salt, and pepper. Stir well to combine and cook for an additional 2-3 minutes.
  4. Make two small wells in the hash mixture and crack an egg into each well. Cover the skillet and cook for about 3-5 minutes, or until the eggs are cooked to your desired doneness.
  5. Remove from heat and sprinkle with fresh parsley, if using. Serve immediately.

  • For a spicier kick, add a pinch of red pepper flakes while sautéing the vegetables.
