- 8 ounces cream cheese
- 1 teaspoon vanilla extract
- 2 tablespoons powdered erythritol
- 1/2 teaspoon cinnamon
- 4 large eggs
- 1 tablespoon coconut flour
- 1 teaspoon baking powder
- 1/4 cup butter
- 1/4 cup almond flour
Instructions
- In a bowl, mix cream cheese, vanilla, erythritol, and cinnamon until smooth.
- In another bowl, whisk eggs, coconut flour, and baking powder together.
- Heat a skillet over medium heat and melt butter.
- Pour the egg mixture into the skillet and cook until set, about 2-3 minutes each side.
- Spread the cream cheese mixture on top of the cooked egg, then roll it up.
- Slice and serve the rolls, optionally dusting with extra erythritol and cinnamon.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Serve with sugar-free syrup for added sweetness.
