Instructions
- Start by grating the daikon radish using a box grater or food processor. Place the grated daikon in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving crispy hash browns.
- In a large mixing bowl, combine the grated daikon, salt, black pepper, garlic powder, onion powder, beaten egg, almond flour, and Parmesan cheese. Mix until well combined.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the daikon mixture and form it into a patty. Carefully place the patty in the hot skillet. Repeat with additional patties, making sure not to overcrowd the pan.
- Cook each patty for about 4-5 minutes on each side, or until golden brown and crispy. Add more oil as needed for the second batch.
- Once cooked, transfer the hash browns to a paper towel-lined plate to absorb excess oil. Serve hot.
