Description
Crispy Lotus Root Keto Chips are a delicious and healthy snack option that offers a perfect crunch while being low in carbs.
Ingredients
Scale
- 2 medium-sized lotus roots (about 8 ounces total)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Optional: fresh herbs for garnish (like parsley or cilantro)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel the lotus roots using a vegetable peeler and slice them thinly (about 1/8 inch thick) using a sharp knife or a mandoline for uniform thickness.
- Place the sliced lotus root in a bowl and drizzle with olive oil. Toss to coat evenly.
- Add sea salt, garlic powder, paprika, and black pepper to the bowl. Mix until all slices are well-seasoned.
- Arrange the seasoned lotus root slices in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure crispiness.
- Bake in the preheated oven for 20-25 minutes, flipping the chips halfway through, until they are golden brown and crispy. Keep an eye on them to prevent burning.
- Remove from the oven and let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
- For extra flavor, try adding a sprinkle of nutritional yeast for a cheesy taste.
- Experiment with different seasonings like chili powder or cumin for a spicy kick.
