- 2 pounds pork belly
- 2 tablespoons sesame oil
- 1 inch fresh ginger, grated
- 4 cups bok choy, chopped
- 1/4 cup chili oil
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 3 tablespoons rice vinegar
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Score the skin of the pork belly and rub with salt and sesame oil.
- Place pork belly in the oven and roast for 1 hour until crispy.
- In a pan, heat chili oil and sauté garlic and ginger until fragrant.
- Add bok choy and soy sauce, cooking until wilted.
- Drizzle rice vinegar over the bok choy.
- Slice the pork belly and serve over the bok choy.
Notes
- For extra crispiness, broil the pork belly for a few minutes at the end.
- Adjust the amount of chili oil based on your spice preference.
