Ingredients

  • 2 medium zucchinis
  • 7 ounces feta cheese, crumbled
  • 1 large egg
  • 1 cup almond flour (instead of breadcrumbs)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Wash the zucchinis thoroughly, trim the ends, and grate them coarsely. Place in a colander, sprinkle with salt, and let sit for about 10 minutes to draw out excess moisture.
  3. Squeeze the grated zucchini to remove as much moisture as possible and transfer to a large mixing bowl.
  4. Add the crumbled feta cheese, egg, almond flour, Parmesan cheese, garlic, oregano, black pepper, and parsley to the zucchini. Mix well until combined.
  5. Form small balls with your hands and place them on the prepared baking sheet.
  6. Drizzle the balls lightly with olive oil and bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy.
  7. Remove from the oven and serve warm, ideally with a yogurt dip or a fresh salad on the side.

Notes

  • For added flavor, consider mixing in some chopped sun-dried tomatoes or olives.
  • If you prefer a spicier kick, add a pinch of red pepper flakes to the mixture.
