Ingredients

- 2 medium zucchinis
- 7 ounces feta cheese, crumbled
- 1 large egg
- 1 cup almond flour (instead of breadcrumbs)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Wash the zucchinis thoroughly, trim the ends, and grate them coarsely. Place in a colander, sprinkle with salt, and let sit for about 10 minutes to draw out excess moisture.
- Squeeze the grated zucchini to remove as much moisture as possible and transfer to a large mixing bowl.
- Add the crumbled feta cheese, egg, almond flour, Parmesan cheese, garlic, oregano, black pepper, and parsley to the zucchini. Mix well until combined.
- Form small balls with your hands and place them on the prepared baking sheet.
- Drizzle the balls lightly with olive oil and bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and serve warm, ideally with a yogurt dip or a fresh salad on the side.
Notes
- For added flavor, consider mixing in some chopped sun-dried tomatoes or olives.
- If you prefer a spicier kick, add a pinch of red pepper flakes to the mixture.
