- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped fresh parsley (or 2 teaspoons dried parsley)
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Vegetable oil for frying
Instructions
- Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini to remove as much liquid as possible.
- In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, eggs, parsley, black pepper, garlic powder, and onion powder. Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or plain yogurt.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the mixture.
- Try substituting the Parmesan cheese with feta cheese for a different flavor profile.
