Ingredients

Scale
  • 2 pounds beef (such as chuck or brisket)
  • 1 cup red wine
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, sliced
  • 2 sticks celery, chopped
  • 4 bay leaves
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup tomato paste
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 tablespoon sugar

Instructions

  1. Marinate the beef in red wine, onions, garlic, bay leaves, pepper, and salt for at least 4 hours or overnight.
  2. Remove the beef from the marinade and pat dry.
  3. In a large pot, heat olive oil and brown the beef on all sides.
  4. Add the marinade, tomato paste, broth, carrot, celery, and sugar to the pot.
  5. Simmer on low heat for 2-3 hours until the beef is fork-tender.
  6. Remove the beef and let it rest before slicing.
  7. Thicken the sauce if necessary, and serve over the sliced beef.
