Description

This rich and luscious cake is made without flour and uses olive oil for moisture, making it a perfect treat for chocolate lovers.


Ingredients

  • 1 cup semisweet chocolate chips
  • 1/2 cup extra virgin olive oil
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a microwave-safe bowl, melt the chocolate chips in increments until smooth.
  3. Stir in the olive oil, then mix in the sugar until well combined.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. In a separate bowl, whisk together the cocoa powder, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
