A flavorful and satisfying low-carb keto meatloaf made with grass-fed beef and fresh herbs.
Ingredients

- 2 pounds 85% lean grass-fed ground beef
- 1/2 tablespoon fine Himalayan salt
- 1 teaspoon black pepper
- 1/4 cup nutritional yeast
- 2 large eggs
- 2 tablespoons avocado oil
- 1 tablespoon lemon zest
- 1/4 cup chopped parsley
- 1/4 cup chopped fresh oregano
- 4 cloves garlic
Instructions
- Preheat the oven to 400℉.
- In a large bowl, mix the ground beef, salt, black pepper, and nutritional yeast until well combined.
- In a blender or food processor, combine the eggs, avocado oil, parsley, oregano, garlic, and lemon zest. Blend until frothy.
- Add the egg mixture to the beef mixture and mix until fully combined.
- Transfer the meat mixture to a small 8×4 loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until golden brown.
- Drain excess fluid and let cool for 5-10 minutes before slicing.
- Garnish with fresh lemon if desired and serve.
Notes
- Mix in shredded cheese or diced bell peppers for extra flavor.
- Serve with low-carb vegetables like roasted cauliflower or sautéed zucchini.
