A savory breakfast casserole loaded with bacon, sausage, and cheese, perfect for a hearty morning meal.


Ingredients

  • 8 slices bacon, cut into chunks
  • 3/4 pound ground breakfast sausage
  • 1/2 cup diced onions
  • 1/4 cup diced red peppers
  • 1 (30 ounce) package frozen shredded hash browns, thawed
  • 1 teaspoon granulated garlic or garlic powder
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups shredded cheese (pepper jack and cheddar recommended)
  • 10 large eggs
  • 1 cup milk
  • Green onions or chives for garnish
  • Additional salt and pepper to taste

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Heat a large 12-inch oven-safe skillet over medium heat. Add the bacon and cook until crispy. Remove the bacon and place it on a paper towel to drain.
  3. In the same skillet, add the sausage, onions, and red peppers. Cook until the sausage is browned and the vegetables are tender, about 8-10 minutes. Remove from heat and set aside.
  4. Drain all but 2 tablespoons of grease from the skillet. Add the thawed hash browns, granulated garlic, salt, black pepper, and red pepper flakes (if using). Stir to combine.
  5. In a separate bowl, whisk together the eggs and milk until well combined.
  6. Layer the cooked sausage, onions, red peppers, and bacon over the hash browns. Sprinkle 2 cups of the shredded cheese on top. Pour the egg mixture evenly over everything.
  7. Place the skillet in the middle rack of the oven and bake for 40-45 minutes, or until the center is just starting to set and is not wobbly.
  8. Remove the casserole from the oven and sprinkle the remaining cheese on top. Return to the oven and bake for an additional 10-12 minutes, until the cheese is melted and bubbly.
  9. Garnish with sliced green onions or chives before serving.

Notes

  • For a healthier option, substitute turkey bacon and lean turkey sausage.
  • Feel free to customize the cheese; mozzarella or gouda can add a different flavor profile.
