- 8 slices bacon, cut into chunks
- 3/4 pound ground breakfast sausage
- 1/2 cup diced onions
- 1/4 cup diced red peppers
- 1 (30 ounce) package frozen shredded hash browns, thawed
- 1 teaspoon granulated garlic or garlic powder
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 3 cups shredded cheese (pepper jack and cheddar recommended)
- 10 large eggs
- 1 cup milk
- Green onions or chives for garnish
- Additional salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F.
- Heat a large 12-inch oven-safe skillet over medium heat. Add the bacon and cook until crispy. Remove the bacon and place it on a paper towel to drain.
- In the same skillet, add the sausage, onions, and red peppers. Cook until the sausage is browned and the vegetables are tender, about 8-10 minutes. Remove from heat and set aside.
- Drain all but 2 tablespoons of grease from the skillet. Add the thawed hash browns, granulated garlic, salt, black pepper, and red pepper flakes (if using). Stir to combine.
- In a separate bowl, whisk together the eggs and milk until well combined.
- Layer the cooked sausage, onions, red peppers, and bacon over the hash browns. Sprinkle 2 cups of the shredded cheese on top. Pour the egg mixture evenly over everything.
- Place the skillet in the middle rack of the oven and bake for 40-45 minutes, or until the center is just starting to set and is not wobbly.
- Remove the casserole from the oven and sprinkle the remaining cheese on top. Return to the oven and bake for an additional 10-12 minutes, until the cheese is melted and bubbly.
- Garnish with sliced green onions or chives before serving.
Notes
- For a healthier option, substitute turkey bacon and lean turkey sausage.
- Feel free to customize the cheese; mozzarella or gouda can add a different flavor profile.
