- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup beef broth
- 1 tablespoon taco seasoning
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
- Add the onion and garlic, cooking until softened.
- Stir in the diced tomatoes, tomato sauce, beef broth, and taco seasoning.
- Bring to a simmer and cook for 15 minutes.
- Lower the heat and stir in the heavy cream and shredded cheddar cheese until melted and smooth.
- Serve hot, garnished with sour cream and cilantro.
