This Easy & Creamy Keto Taco Soup is a delicious and satisfying meal that’s perfect for a low-carb diet.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, and taco seasoning.
  4. Bring to a simmer and cook for 15 minutes.
  5. Lower the heat and stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  6. Serve hot, garnished with sour cream and cilantro.
