Delicious and simple no bake peanut butter cookies that require minimal ingredients and time.

- 1 cup peanut butter
- 1 cup granulated sugar
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1/2 cup chocolate chips (optional)
Instructions
- In a large bowl, mix together the peanut butter, sugar, honey, and vanilla extract until smooth.
- Stir in the rolled oats until well combined.
- If using, fold in the chocolate chips.
- Using a cookie scoop or your hands, form the mixture into balls and place them on a baking sheet.
- Refrigerate for about 30 minutes or until set.
