Description

These Easy Samoas Cookie Bars are a delicious and simple take on the classic Girl Scout cookie. With a rich chocolate layer, gooey caramel, and a hint of coconut, these bars are sure to satisfy your sweet tooth!


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sweetened flaked coconut
  • 1 cup caramel sauce
  • 1 cup semisweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until well combined.
  6. Stir in the coconut until evenly distributed.
  7. Press the mixture firmly into the prepared baking dish and bake for 20–25 minutes or until lightly golden.
  8. Remove from the oven and let cool slightly.
  9. Pour the caramel sauce over the baked bars and spread it evenly.
  10. Melt the chocolate chips and drizzle over the caramel layer. Let cool and set before cutting into bars.

Notes

  • For an extra touch, sprinkle a little sea salt over the chocolate layer before it sets.
  • Store in an airtight container at room temperature for up to a week.
