These Easy Samoas Cookie Bars are a delicious and simple take on the classic Girl Scout cookie. With a rich chocolate layer, gooey caramel, and a hint of coconut, these bars are sure to satisfy your sweet tooth!

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups sweetened flaked coconut
- 1 cup caramel sauce
- 1 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until well combined.
- Stir in the coconut until evenly distributed.
- Press the mixture firmly into the prepared baking dish and bake for 20–25 minutes or until lightly golden.
- Remove from the oven and let cool slightly.
- Pour the caramel sauce over the baked bars and spread it evenly.
- Melt the chocolate chips and drizzle over the caramel layer. Let cool and set before cutting into bars.
Notes
- For an extra touch, sprinkle a little sea salt over the chocolate layer before it sets.
- Store in an airtight container at room temperature for up to a week.
