- 2 large eggs
- 1 cup shredded cheese (mix of mozzarella and cheddar recommended)
- Salt, to taste (about 1/4 teaspoon recommended)
- Pepper, to taste (about 1/4 teaspoon recommended)
- Optional Add-Ins:
- Diced bell peppers, for added crunch and color
- Fresh herbs (parsley, chives, or basil), for a burst of flavor
- Crushed red pepper flakes, for a spicy kick
- Cooked and crumbled bacon, for a savory, meaty addition
- Spinach or kale, for an extra dose of greens
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Using a vegetable peeler or mandoline, slice the zucchini lengthwise into thin strips, about 1/8 inch thick.
- In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
- Lay the zucchini strips flat on the prepared baking sheet, slightly overlapping them to form a wrap base.
- Pour the egg mixture evenly over the zucchini strips, ensuring they are well coated.
- Sprinkle the shredded cheese over the zucchini and egg mixture, adding any optional add-ins you desire.
- Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly, and the zucchini is tender.
- Remove from the oven and let cool for a few minutes before slicing into quarters.
Notes
- For added flavor, consider marinating the zucchini strips in olive oil and garlic before assembling the wrap.
- Experiment with different cheeses such as pepper jack for a spicy twist or feta for a tangy flavor.
