- 1 large eggplant, diced
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar
- 1 teaspoon chili paste (optional)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and ginger, cooking for another minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Drain any excess fat if necessary.
- Stir in the diced eggplant and cook for another 5 minutes until the eggplant is tender.
- Add the soy sauce, sesame oil, rice vinegar, and chili paste (if using). Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes to combine the flavors.
- Remove from heat and let cool slightly before serving.
- Spoon the beef and eggplant mixture into bowls and garnish with sliced green onions and sesame seeds.
Notes
- For added flavor, consider adding a splash of lime juice before serving.
- You can substitute the ground beef with ground turkey or chicken for a leaner option.
