  • 1 pound ground beef

  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon chili paste (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Drain any excess fat if necessary.
  6. Stir in the diced eggplant and cook for another 5 minutes until the eggplant is tender.
  7. Add the soy sauce, sesame oil, rice vinegar, and chili paste (if using). Season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes to combine the flavors.
  9. Remove from heat and let cool slightly before serving.
  10. Spoon the beef and eggplant mixture into bowls and garnish with sliced green onions and sesame seeds.
