Ingredients

- 1 cup dried chickpeas
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon cayenne pepper
- 1 teaspoon baking powder
- 1/4 cup flour
- Salt to taste
- Oil for frying
- 1 cup plain yogurt
- 1/4 teaspoon salt
- 1 teaspoon lemon juice
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup olives
Instructions
- Soak chickpeas in water overnight.
- Drain and rinse the chickpeas, then blend them with onion, garlic, parsley, cumin, coriander, cayenne, baking powder, flour, and salt until smooth.
- Form the mixture into balls and refrigerate for 30 minutes.
- Heat oil in a pan and fry the falafel until golden brown.
- In a bowl, mix yogurt, salt, lemon juice, cucumber, tomato, and olives.
- Serve the falafel with the yogurt mixture in bowls.
Notes
- For extra flavor, add tahini to the yogurt mix.
- Falafel can be baked for a healthier option.
