A delicious and healthy festive salad perfect for keto diets during the holiday season.


Ingredients

Scale
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, olives, and walnuts.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately, or refrigerate for an hour to let the flavors meld.
