Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup walnuts, chopped
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, olives, and walnuts.
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately, or refrigerate for an hour to let the flavors meld.
