Description

A vibrant and healthy mason jar salad packed with fresh vegetables and a zesty dressing.


Ingredients

Scale
  • 1 cup corn, canned or frozen
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1 cup red onion, diced
  • ½ cup cilantro, chopped
  • ¼ cup lime juice
  • ¼ cup olive oil
  • 1 teaspoon cumin
  • Salt to taste


Instructions

  1. Layer the ingredients in a mason jar starting with the lime juice and olive oil, then add the corn, bell peppers, cherry tomatoes, cucumbers, red onion, and finish with cilantro on top.
  2. Seal the jar and refrigerate for at least 30 minutes to allow flavors to meld.
  3. To serve, shake the jar to mix the dressing and ingredients, then pour into a bowl or enjoy directly from the jar.
