Ingredients

- 1 cup corn, canned or frozen
- 1 cup bell peppers, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1 cup red onion, diced
- ½ cup cilantro, chopped
- ¼ cup lime juice
- ¼ cup olive oil
- 1 teaspoon cumin
- Salt to taste
Instructions
- Layer the ingredients in a mason jar starting with the lime juice and olive oil, then add the corn, bell peppers, cherry tomatoes, cucumbers, red onion, and finish with cilantro on top.
- Seal the jar and refrigerate for at least 30 minutes to allow flavors to meld.
- To serve, shake the jar to mix the dressing and ingredients, then pour into a bowl or enjoy directly from the jar.
Notes
- For added protein, consider topping with grilled chicken or tofu.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
