Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup cream cheese, softened
  • 4 large eggs
  • 1/4 cup erythritol or preferred sweetener
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
  3. In another bowl, mix cream cheese, eggs, and vanilla until smooth.
  4. Combine the wet and dry ingredients, then mix until well combined.
  5. Pour the batter into a muffin tin lined with liners.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
