- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup cream cheese, softened
- 4 large eggs
- 1/4 cup erythritol or preferred sweetener
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, mix cream cheese, eggs, and vanilla until smooth.
- Combine the wet and dry ingredients, then mix until well combined.
- Pour the batter into a muffin tin lined with liners.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before serving.
