Ingredients

  • 1 head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, pulse cauliflower florets until they resemble rice.
  3. Transfer cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, mix the cauliflower rice with olive oil, garlic, oregano, thyme, salt, and pepper.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, until golden brown.
  7. Sprinkle with Parmesan cheese and return to the oven for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
