- 1 head cauliflower, cut into florets
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a food processor, pulse cauliflower florets until they resemble rice.
- Transfer cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower rice with olive oil, garlic, oregano, thyme, salt, and pepper.
- Spread the mixture onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, until golden brown.
- Sprinkle with Parmesan cheese and return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a vegan option, omit the Parmesan cheese or use a vegan alternative.
- You can add your favorite toppings such as avocado or cherry tomatoes.
