Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups mixed salad greens (such as spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)

For the tarragon dressing:

  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh tarragon, chopped (or 1 teaspoon dried tarragon)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the steak pieces, olive oil, minced garlic, salt, and black pepper. Toss to coat the steak evenly.
  2. Heat a skillet over medium-high heat. Add the steak bites and cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired level of doneness. Remove from heat and set aside.
  3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, tarragon, Dijon mustard, salt, and pepper until smooth. Adjust seasoning to taste.
  4. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.
  5. Add the cooked steak bites on top of the salad and drizzle with the tarragon dressing. Toss gently to combine everything.
  6. If using, sprinkle crumbled feta cheese over the top before serving.
