Description
A healthy twist on the classic General Tso’s Chicken, featuring kale and nutritious grains.
Ingredients

- 1 pound chicken breast, cut into bite-sized pieces
- 2 cups kale, chopped
- 1 cup cooked quinoa
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil
- 2 tablespoons sesame seeds
Instructions
- In a bowl, combine soy sauce, honey, ginger, and garlic. Add chicken and marinate for 30 minutes.
- In a separate bowl, toss kale with a tablespoon of oil and set aside.
- Heat remaining oil in a skillet over medium-high heat. Add marinated chicken and cook until golden and cooked through, about 10 minutes.
- Sprinkle cornstarch over chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- In a bowl, serve cooked quinoa topped with kale and General Tso’s chicken. Sprinkle sesame seeds on top before serving.
Notes
- This recipe can be made ahead of time for meal prep.
- Substitute chicken with tofu for a vegetarian option.
