- 8 ounces goat cheese
- 1/2 cup fresh basil, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the goat cheese, basil, sun-dried tomatoes, minced garlic, salt, and black pepper.
- Slice each chicken breast horizontally to create a pocket.
- Stuff each chicken breast with the goat cheese mixture.
- Secure the opening with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Brown the stuffed chicken on each side for about 3-4 minutes.
- Transfer the skillet to the oven and roast for 20-25 minutes, or until cooked through.
- Remove from the oven, let rest for a few minutes, then slice and serve.
