Description

Delicious chicken breasts stuffed with creamy goat cheese and fragrant basil, then rolled and roasted to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces goat cheese
  • 1/2 cup fresh basil, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the goat cheese, basil, sun-dried tomatoes, minced garlic, salt, and black pepper.
  3. Slice each chicken breast horizontally to create a pocket.
  4. Stuff each chicken breast with the goat cheese mixture.
  5. Secure the opening with toothpicks or kitchen twine.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Brown the stuffed chicken on each side for about 3-4 minutes.
  8. Transfer the skillet to the oven and roast for 20-25 minutes, or until cooked through.
  9. Remove from the oven, let rest for a few minutes, then slice and serve.
