Delicious and healthy Golden Turmeric Cauliflower Rolls that are perfect for a keto diet.

- 1 medium head of cauliflower, cut into florets
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1/2 cup almond flour
- 1 teaspoon turmeric powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon baking powder
- 1 tablespoon olive oil (for brushing)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Steam the cauliflower florets until tender, about 10 minutes. Drain well and let cool slightly.
- In a food processor, blend the steamed cauliflower until smooth.
- In a large bowl, combine the cauliflower puree, egg, mozzarella cheese, almond flour, turmeric powder, garlic powder, onion powder, salt, black pepper, and baking powder. Mix until well combined.
- Scoop out portions of the mixture and shape them into rolls, placing them on the prepared baking sheet.
- Brush the tops of the rolls with olive oil.
- Bake for 25-30 minutes, or until golden brown and firm to the touch.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper to the mixture.
- For a cheesy variation, mix in 1/4 cup of grated Parmesan cheese before baking.
