Delicious and healthy Golden Turmeric Cauliflower Rolls that are perfect for a keto diet.


Ingredients

Scale
  • 1 medium head of cauliflower, cut into florets
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • 1 tablespoon olive oil (for brushing)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Steam the cauliflower florets until tender, about 10 minutes. Drain well and let cool slightly.
  3. In a food processor, blend the steamed cauliflower until smooth.
  4. In a large bowl, combine the cauliflower puree, egg, mozzarella cheese, almond flour, turmeric powder, garlic powder, onion powder, salt, black pepper, and baking powder. Mix until well combined.
  5. Scoop out portions of the mixture and shape them into rolls, placing them on the prepared baking sheet.
  6. Brush the tops of the rolls with olive oil.
  7. Bake for 25-30 minutes, or until golden brown and firm to the touch.
  8. Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley.

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper to the mixture.
  • For a cheesy variation, mix in 1/4 cup of grated Parmesan cheese before baking.
