Ingredients

  • 2 medium eggplants, sliced into 1/4-inch rounds
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle the sliced eggplant with salt and let it sit for about 30 minutes to draw out moisture. Rinse and pat dry.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the diced tomatoes, oregano, cinnamon, black pepper, and red pepper flakes. Simmer for 10 minutes, then remove from heat.
  6. In a separate bowl, whisk together the heavy cream and eggs until well combined.
  7. In a greased 9×13-inch baking dish, layer half of the eggplant slices on the bottom. Spread half of the meat mixture over the eggplant, followed by half of the cream mixture. Repeat with the remaining eggplant, meat, and cream mixture.
  8. Top with shredded mozzarella and grated Parmesan cheese.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly. Let it cool for 10 minutes before serving.
