- 3 leeks, sliced

Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the leeks and garlic, sautéing until softened.
- Stir in the cauliflower rice, lemon juice, salt, and pepper.
- Cook for about 5-7 minutes until the cauliflower is tender.
- Remove from heat and stir in fresh parsley.
- Serve warm.

- For extra flavor, add feta cheese on top before serving.
