- 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried oregano)
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, black pepper, and red pepper flakes (if using).
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken overnight.
- Serve with a side of tzatziki sauce and a Greek salad for a complete meal.
