Juicy and flavorful Greek Lemon-Oregano Chicken Skewers


Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried oregano)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers


Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, black pepper, and red pepper flakes (if using).
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove from the grill and let rest for a few minutes before serving.
