Description

Greek Stifado is a rich, hearty stew featuring tender beef and a savory tomato sauce, seasoned with aromatic spices for a comforting meal.


Ingredients

  • 2 pounds beef stew meat
  • 1/4 cup olive oil
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 cans (14 ounces each) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 1/4 cup red vinegar
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon bay leaves
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 cup pearl onions
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown beef on all sides.
  2. Add onions and garlic; sauté until soft.
  3. Stir in diced tomatoes, tomato paste, red wine, red vinegar, and spices.
  4. Bring to a simmer, then cover and cook on low heat for 2 hours.
  5. Add pearl onions and cook for an additional 30 minutes.
  6. Serve hot, garnished with parsley.
