- 2 pounds beef stew meat
- 1/4 cup olive oil
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 cans (14 ounces each) diced tomatoes
- 2 tablespoons tomato paste
- 1 cup red wine
- 1/4 cup red vinegar
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 teaspoon bay leaves
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/4 teaspoon sugar
- 1 cup pearl onions
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown beef on all sides.
- Add onions and garlic; sauté until soft.
- Stir in diced tomatoes, tomato paste, red wine, red vinegar, and spices.
- Bring to a simmer, then cover and cook on low heat for 2 hours.
- Add pearl onions and cook for an additional 30 minutes.
- Serve hot, garnished with parsley.
Notes
- For a richer flavor, let the stew sit overnight in the refrigerator and reheat before serving.
