Description

A delicious low carb and keto-friendly dish featuring crisp green beans and toasted almonds.


Ingredients

Scale
  • 1 pound fresh green beans
  • 1/4 cup sliced almonds
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste


Instructions

  1. Trim the ends of the green beans and rinse them under cold water.
  2. In a large pot, bring water to a boil and add the green beans. Blanch for about 3 minutes until tender-crisp.
  3. Drain the green beans and immediately place them in ice water to stop the cooking process.
  4. In a skillet, melt the butter over medium heat. Add the sliced almonds and toast until golden brown, about 2-3 minutes.
  5. Add minced garlic and sauté for 1 minute until fragrant.
  6. Drain the green beans and add them to the skillet. Toss to coat with garlic and almonds.
  7. Drizzle with lemon juice and season with salt and pepper to taste. Serve warm.

Notes

  • This recipe can be prepared in advance, but it’s best served immediately for optimal crispness.
  • Feel free to add grated Parmesan cheese for extra flavor.
