Ingredients

  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup almond butter
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup warm water (more if needed)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the trimmed asparagus with olive oil, salt, and pepper.
  3. Place the asparagus on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.
  4. While the asparagus is grilling, prepare the Almond Hollandaise by combining almond butter, lemon juice, Dijon mustard, garlic powder, and salt in a mixing bowl.
  5. Gradually whisk in warm water until you reach your desired consistency. If the sauce is too thick, add more warm water, a tablespoon at a time.
  6. Once the asparagus is grilled, remove it from the grill and transfer to a serving platter.
  7. Drizzle the Almond Hollandaise over the asparagus and serve immediately.

Notes

  • For added flavor, sprinkle some grated Parmesan cheese over the asparagus before serving.
  • You can substitute almond butter with cashew butter for a different nutty flavor.
