Ingredients

  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 clove garlic, finely minced
  • Zest of 1 lime


Instructions

  1. Begin by heating your grill to a medium-high temperature.
  2. In a mixing bowl, combine the softened butter with dill, mint, smoked paprika, ground coriander, red pepper flakes, minced garlic, and lime zest. Stir until smooth and well blended, then set aside.
  3. Rinse the sardines under cold water and gently pat them dry.
  4. In a separate bowl, whisk together the olive oil, sea salt, black pepper, and lemon juice. Add the sardines and carefully toss to coat them evenly.
  5. Place the sardines on the preheated grill, cooking for about 3-4 minutes on each side until fully cooked.
  6. Transfer the grilled sardines to a serving dish and generously spoon the zesty herb butter over them.
  7. Serve immediately with lime wedges on the side.
