- 1 tablespoon freshly squeezed lemon juice

- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh mint, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 clove garlic, finely minced
- Zest of 1 lime
Instructions
- Begin by heating your grill to a medium-high temperature.
- In a mixing bowl, combine the softened butter with dill, mint, smoked paprika, ground coriander, red pepper flakes, minced garlic, and lime zest. Stir until smooth and well blended, then set aside.
- Rinse the sardines under cold water and gently pat them dry.
- In a separate bowl, whisk together the olive oil, sea salt, black pepper, and lemon juice. Add the sardines and carefully toss to coat them evenly.
- Place the sardines on the preheated grill, cooking for about 3-4 minutes on each side until fully cooked.
- Transfer the grilled sardines to a serving dish and generously spoon the zesty herb butter over them.
- Serve immediately with lime wedges on the side.
Notes
- For an added smoky flavor, consider adding wood chips to your grill during cooking.
