Ingredients

  • 4 tablespoons unsalted butter, at room temperature
  • 3 cloves garlic, finely chopped
  • 2 tablespoons fresh dill, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, for garnish


Instructions

  1. Start by heating your grill to a medium-high temperature. If using charcoal, wait until the coals are glowing and covered with ash.
  2. In a mixing bowl, blend the room-temperature butter with the chopped garlic, minced dill, lemon juice, lemon zest, salt, and pepper until the mixture is smooth and well incorporated.
  3. Gently pat the sardines dry using paper towels, then season them with salt and pepper, ensuring to season both the inside and outside.
  4. Generously apply the zesty herb butter inside the cavity of each sardine and on their exterior using a brush or a knife.
  5. Lay the sardines directly onto the grill grates. Cook for approximately 3-4 minutes on each side, or until the skin turns golden and crispy, indicating the fish is fully cooked.
  6. Once grilled, take the sardines off the heat and brush them with any leftover herb butter for an extra burst of flavor.
  7. Serve hot, accompanied by lemon wedges for a refreshing squeeze over the fish.

Notes

  • For an added kick, mix in a dash of cayenne pepper to the herb butter.
  • If fresh sardines are unavailable, canned sardines can be used; simply skip the grilling and serve them topped with the herb butter.
