Instructions
- Start by heating your grill to a medium-high temperature. If using charcoal, wait until the coals are glowing and covered with ash.
- In a mixing bowl, blend the room-temperature butter with the chopped garlic, minced dill, lemon juice, lemon zest, salt, and pepper until the mixture is smooth and well incorporated.
- Gently pat the sardines dry using paper towels, then season them with salt and pepper, ensuring to season both the inside and outside.
- Generously apply the zesty herb butter inside the cavity of each sardine and on their exterior using a brush or a knife.
- Lay the sardines directly onto the grill grates. Cook for approximately 3-4 minutes on each side, or until the skin turns golden and crispy, indicating the fish is fully cooked.
- Once grilled, take the sardines off the heat and brush them with any leftover herb butter for an extra burst of flavor.
- Serve hot, accompanied by lemon wedges for a refreshing squeeze over the fish.

- If fresh sardines are unavailable, canned sardines can be used; simply skip the grilling and serve them topped with the herb butter.
