  • 2 medium zucchinis, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the sliced zucchini, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Cook for about 5-7 minutes, or until the zucchini is tender.
  5. If using, sprinkle the shredded mozzarella cheese on top and cover the skillet. Allow the cheese to melt for 2-3 minutes.
  6. Remove from heat and garnish with fresh basil if desired. Serve warm.
