- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese (optional)
- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the sliced zucchini, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Cook for about 5-7 minutes, or until the zucchini is tender.
- If using, sprinkle the shredded mozzarella cheese on top and cover the skillet. Allow the cheese to melt for 2-3 minutes.
- Remove from heat and garnish with fresh basil if desired. Serve warm.

- For added flavor, consider adding red pepper flakes for a spicy kick.
- Substitute ground beef with ground turkey or chicken for a leaner option.
