Ingredients

  • 200 grams halloumi cheese
  • 1 large pomegranate, seeded
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt to taste


Instructions

  1. Rinse the quinoa under cold water.
  2. Cook the quinoa according to package instructions, then let it cool.

  4. In a large bowl, combine the cooked quinoa, pomegranate seeds, cucumber, red bell pepper, and parsley.
