Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Remove the outer leaves from the cauliflower and cut off the base of the stem. Slice the cauliflower head into thick slices, about 1 inch each, yielding approximately 4 to 6 slices.
  3. In a mixing bowl, combine the spicy harissa sauce, extra virgin olive oil, onion powder, smoked chili powder, salt, and black pepper. Stir until smooth and well blended.
  4. Coat each side of the cauliflower slices with the harissa mixture using a brush or spoon, ensuring they are fully covered. Arrange the slices on the prepared baking sheet.
  5. Roast the cauliflower in the oven for 25 to 30 minutes, turning them halfway through, until tender and golden.
  6. Remove from the oven and allow to cool slightly. If desired, sprinkle with chopped cilantro or parsley before serving.
