Description

A rich and creamy hazelnut cheesecake that combines the flavors of hazelnut spread and a buttery graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup hazelnut spread (like Nutella)
  • 1 cup heavy cream
  • ½ cup chopped hazelnuts, toasted

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 10 minutes, then remove from the oven and let cool.
  5. In a large mixing bowl, beat the softened cream cheese with ¾ cup of sugar until smooth and creamy.
  6. Add the vanilla extract and mix well.
  7. Incorporate the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.
  8. Gently fold in the hazelnut spread until fully incorporated.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  12. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  13. Before serving, whip the heavy cream until soft peaks form.
  14. Spread or pipe the whipped cream over the top of the cheesecake and sprinkle with chopped hazelnuts.

Notes

  • For a richer flavor, try adding a tablespoon of espresso powder to the cheesecake batter.
  • If you prefer a lighter version, substitute half of the cream cheese with Greek yogurt.
